For series The Clone Wars 100%. It added so much to the prequels. By far the most influential Star Wars show. Rebels is also very good outside of the art style. The Bad Batch was good. Andor S1 and S2 is by far the best live action Star Wars show. The Mandalorian S1 and S2 were good especially for the time. Skeleton Crew was surprisingly good even if its aimed for younger audience. At least its clear the people making it actually cared. Rest of the live action shows are shit aka Obi-Wan, The Acolyte, Ahsoka, The Mandalorian S3, The Book of Boba Fett. All garbage with lazy production value.
For movies The Revenge of the Sith is my favorite, Rogue One/A New Hope and The Empire Strikes Back are all top tier. Attack of The Clones and Phantom Menace are decent (AOTC my favorite as child). Not fan of sequels, but The Force Awakens > The Last Jedi and Rise of Skywalker. Solo was pretty decent and bit underrated IMO.

Andor is my favorite, honestly cannot decide between the 2 seasons. Rogue one is sick, even better with the context of Andor.

Anything Old Republic related is absolute class. The franchise had a lot of potential to build off of the end of the first trilogy but Disney massacred it like Anakin did the padawans in the Jedi temple
outside of TV and movies, i really liked the new Fallen Order games, i know its made by EA but it was geniunely good, probably the best star wars game i have played since Knights of the old republic
