Simon vs Anti Spiral Gurren Laggan (Movie version. god vs humans, the whole meaning of the anime is in this fight, it's just pure testosterone)
Azula vs Zuko Avatar the Legend of Aang (All of Zuko perfect characts developement lead to this point, the build up was perfect and the paralels was insane)
Kakashi vs Obito. Naruto (Hand to hand version. This may he a hot take for me, but this fight is just soo cool, and the story behind the fight is also good)

Honerable mention:

Kimura vs Mashiba. Hajime no Ippo (Where the talent doesn't reach, when doesn't matter how many u try, u just can't get over it. A fight where it shows u can't have everything with hard work, even if u die trying, some peoples aren't made to go beyond it)

Dont really have a top 3 but here are some of my favourite fights

(HM: Touma vs Orthinus, its a LN fight but toaru has an anime, so maybbeeeee it will get animated one day [A certain Magical Index], same with [Re-Zero]'s Eugard vs Halibel)

Now here is 'the top 3" (I took 5 seconds to think about this and its just how much I enjoyed each fight)

Very quick shortlist, I could take like 10 seconds and change my mind. But in terms of pure writing, I think only the the LN fights I mentioned are on par/better
