because VLR is trolling a bit here, I'll give you a real answer - a great coach can anti-strat an opponent far more efficiently than a good coach, and they can create comps and ideas around certain characters or players. if a team is winning rounds on individual plays it's most likely just the players being individually good, but if there's more and more flawless rounds usually the coach is the one behind the scenes. Also the ability to understand each player on an individual level and their own strengths and weaknesses rather than the team in general or just based on their agent pool
However, the one true thing that separates a good coach from a great coach is the number of pages they are willing to generate about Icebox.
