Specifically the 80HE. Although if OP prefers 60%, the 60HE v2 would be the one to wait for. In terms of mice, it depends on hand size and grip type. The Viper V3 or the eventual V4 release will be the market leader, but if you want something small and lightweight - WLMouse BeastX Pro/Mini Pro. Pulsar Crazylight is also pretty nice.
anything with rapid trigger for kb and for mouse, i prefer using ergo mouse rather than gpx.

mouse is debatle but gpro super lightx, viper v3 pro, ulx pro, lamzu atlantis, ninjutso sora v2
personally i have apex pro mini and viper v3, but im only peak immo 2 so idk if ur goal is higher or not but realistically you can do anything on any setup that doesnt cost less than $100 combined

HE keyboard - there’s good budget options
Idk which is fastest but software wise wooting is ahead
Mouse - choose a shape u like
Prolly vv3 pro but it’s not like the others aren’t good

razer viper v3 pro or the pulsar x2 v3 for me specifically
the wooting 60he is my answer, but i’ve heard that the competition in HE keyboards has come a long way, so i’d do more research
i’d recommend the lamzu maya x or the viper v3 pro
Attack Shark is heavily underrated
I got rid of my Wooting for the Attack Shark x68 HE and it's been flawless so far
Mouse wise I ditched the GPX 2 for Attack Shark R3. Magnesium (46g) 8k Hz and the sensor has been flawless so far. Only thing I had to do was swap out the skates, which I do with most mice anyway
