What? Of course you can mix leaks with the known stuff, how would you keep a leaks spreadsheet up to date if you didn't include the real stuff? The whole point of the spreadsheet is to tell people what's likely to happen or is happening that people may not know about, and sometimes you get that info through leaks, which shouldn't be sourced. Obviously you shouldn't be trusting a spreadsheet 100%, but they aren't meant to be trusted 100%. It's perfectly valid to not trust a spreadsheet because they have no source, it's more just something to keep in mind as a possibility.
If you want a spreadsheet that just has documented what is 100% known, that fine, but that's not what this person is doing or what the point of their spreadsheet is. (Rocketbullets is proven straight ass though and has been shown to have no filter lmao, but you can't generalize them to all be like rocketbullets until they're shown to be)

The teams swap between being on offense and defense, offense you try to score, defense you try to stop them from scoring. Essentially you have to get the ball carried by someone past 10 yards without dropping it, that's call a first down, you get technically 4 chances to get there but most teams choose to punt the ball at the 4th chance because if they fail the enemy team gets the ball at wherever they are, so it's usually better just to kick it away. The goal is to make it to the endzone where if you have a guy in there who is carrying the ball it is a touchdown and the team gets 6 points, they can then choose to either kick a field goal for one point which is easer, or go for two points where they basically have to get another touchdown at the 5 yard line. If a player on the defensive team catches the ball (an interception), or an offensive player drops the ball that they had control over and a defensive player picks it up (a fumble), that team now has the ball and it is now offensive for them. Who bunch of penalty shit too but that's the general stuff that happens.

The benefits to being franchised drastically outweigh the negative possibilities. Having some kind of relegation that isn't necessarily performance based, but is more behavior based is basically required for the scene to be as good as it can be, and Riot does already have this power and seems to be at least entertaining the idea of using it
