I think that's just how pro players utilize viper - they take a lot of map control and lurk, which is the same role as sentinels on attack.
And she is also very good on defense due to her molly and smokes decaying enemies.

Why split and bind? I think because her wall take a lot of valuable space. For example on Bind, you just put a straight wall on A main, isolate lamps, and take 1v1s. Same thing on A Split, just cover main and heaven. You can isolate duels, wait for rotations, or lurk all the way into site.

But if you are filling in premier, I would just fill in any sentinels.
