For sports i like hajime no ippo and slam dunk. Ao ashi and blue lock are also good. Ao ashi has a better story, but blue lock has better art. One without an anime adaptation that i really liked is a manhwa called the boxer. It isnt a manga tho. For seinen there is a lot as it is really not a type of story, but instead an age demographic it is aimed towards. Either way my favorite is either grand blue, berserk, or kingdom (kingdom is weird because it is not really a seinen, but mostly shounen with some seinen tropes especially when the main character is not on screen). Nearly all of my favorite mangas have had an adaptation, but one without an adaptation that i really liked is kasane. Either people love or really hate that manga. Though almost all of these have had an anime adaptation it is worth reading them.
