with the way it's played there generally is no need for a sentinel on the map unless you are playing solo brim.

Bind doesn't have a mid and Viper util works perfectly on Split to cut off site lines and mid like a traditional sentinel would

you need KJ on icebox because lurks are absolutely horrible to deal with otherwise and are insanely strong, by far the map where lurking is the most important, and KJ is the only senti to cover every lurk possibility correctly.
On Split the strenght of cypher has nothing to do with anti lurking or smth, on defense it was very strong in a exec heavy meta when kill trips were actually good, and playing around your setup was still strong bc teams didn't know how to deal with it. That's why Cypher has a low pickrate on split nowadays; his setups are just not very strong, and everything he does viper does it better on attack (ie: putting passive pressure on A ramps). On defense Split almost entirely revolves around controlling mid bc it is what allows you to play for fast pivots between B haven and A haven and be unreadable on your attack, so holding mid on defense is very important and Viper is BY FAR the best agent at this job in the game.The wall is also very good on defense as it allows for a fair amount of stall which a Cypher does not give you.
A senti is not a must pick on breeze
And on fracture it's kinda weird cuz it's some very specific map theory, but sentis are the only class of agents that is able to hold one pole of the map on their own on attack, which is very important as a good defense revolves around pushing or crunching a side, and you have to be able to react off of those defensive movements to have a good read on attack, and a senti is the only thing that allows you have that info safely and reliably. Also Viper isn't played at all on fracture nowadays so I don't really see what bothers you there.
And on bind, sentis are just historically not very good because they strugle to hold a site. The only senti who could do that effectively was Vyse at her prime (even now she's fine but clearly weaker) but the fact that attacking relies 80% of the time on splitting makes it near impossible for a senti to actually stall well, meanwhile Viper, thanks to her wall and orb, has the strongest stall capacity on the map by a large margin. And the lurk wall on attack on A is incredibly strong. I will say tho that we have seen some pretty good solo Vyse no viper Bind this year, so I think the meta is actually more open than it might seem, but playing Viper is still by far the better option in terms of how easy it is to get huge value out of it
