Goat Stew Recipe

Ingredients:

1 pound goat meat, cut into bite-sized pieces
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 carrot, chopped
1 celery stalk, chopped
1 teaspoon dried oregano
1 teaspoon dried thyme
1 bay leaf
2 cups beef broth
1 cup red wine
1 can (14.5 ounces) diced tomatoes
Salt and pepper to taste

Instructions:

1Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
2 Add the garlic, carrot, and celery to the pot and cook for 5 minutes more.
3 Stir in the oregano, thyme, and bay leaf.
4 Add the goat meat to the pot and cook until browned on all sides, about 5 minutes.
5 Pour in the beef broth and red wine. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the goat is tender.
6 Stir in the diced tomatoes and season with salt and pepper to taste.
7 Simmer for 30 minutes more.
8 Serve hot over rice or noodles.
