Ingredients:

500g lamb liver
1 onion
2-3 tablespoons flour
Salt and pepper to taste
1 teaspoon paprika
Olive oil for frying
Lemon wedges for serving

Instructions:

Rinse the liver and pat it dry with a paper towel. Cut it into thin slices.
Peel and finely chop the onion.
In a bowl, mix together the flour, salt, pepper, and paprika.
Heat some olive oil in a frying pan over medium heat.
Dredge the liver slices in the flour mixture and shake off any excess.
Fry the liver slices in the hot oil until browned on both sides, about 2-3 minutes per side.
Remove the liver from the pan and set it aside on a plate.
In the same pan, sauté the chopped onion until translucent and fragrant.
Return the liver to the pan and stir it with the onions for another minute or so.
Serve the liver hot with lemon wedges on the side.
